This is the first balanced dinner I've cooked for myself in a while, given that I was on spring break and pretty much just ate pizza. And beer. Oops. Anyway, this is tilapia that I cooked in parchment in the oven with lemons and pepper and thyme, fresh spinach wilted in a pan with chopped garlic and olive oil (maureen said when we live together she's going to buy olive oil in those huge cans, so i'm trying to learn to embrace the good fats), and a steamed artichoke. This was my first shot ever eating a whole artichoke, not just the heart. I don't know if I did it right or not, but all in all, my dinner was soooooooo good.
