Hummus
I wish someone had told me years ago how amazingly easy, fast, and cheap it is to make hummus. I got canned chickpeas at the store 4/$2, and just jacked a bunch of spices from our cabinet at home (oh, oops. By the way, mom, I borrowed some spices.) I'm sure this would be even more delicious with some olive oil in it, but as Maureen knows, I fear the oil.

Pumpkin pumpkin everywhere!
My roommates have been eating vegan food all day. I did not tell them that these creations are sans milk, eggs, and butter, because they came out so well and I think that mentioning that is almost like appologizing for it. Plus, they wouldn't be able to hear me over all the "MMMMM's" anyway.

Truffles

Christmas cookies
Instead of going to Happy Hour, I stayed in yesterday to make cut-out sugar cookies. We're having a Christmas party tonight and I'm sooo excited. Rosie and I made snowflakes at 1 a.m. last night and strung them around the room. Oh! You can tell I'm in college because I don't have a rolling pin and had to use a wine bottle to roll out the cookie dough. That was kind of tricky.

Chickpea and Broccoli Cassarole
This doesn't look super appealing, but it's very yummy. We talked a lot in class yesterday about genetically engineered animals and it really grossed me out a LOT so tonight's dinner is from The Post Punk Kitchen and is completely free of dairy. It's chickpeas, broccoli, carrots, some breadcrumbs, and vegetable broth, all mushed up and baked for a while. Yum!

Lunch/breakfast today consisted of green beans (since they sell them at the Cab now!) and a smoothie that the lady put way too much ice in. However, green beans were sauteed with garlic and olive oil and were awesome.
Then is dinner from tonight which was veggie burger with more green beans ( canned this time ) and stove top. Since I obvi haven't had enough of that.
